ORIGINS AND NAME

Based on a Chinese myth, Wu Liang, a Chinese tea grower, was buys picking and handling tea laves when he saw a river deer.
He paused to hunt and prepare the killed deer and it interfered with his normal tea processing routine.
He didn’t remember to dry the leaves out and managed to dry them the day after.
By the next day, the tea had begun to change shade, and Wu Liang was worried if it had gone stale but he decided to complete the drying process.
Once he finished, he prepared a cup and he discovered that he had just prepared a very delicious and aromatic tea and this is where oolong was born.
THE FERMENTATION PROCESS
Oolong tea is something between black and green tea in terms of processing.
It’s actually semi-fermented which implies that it is subject to a lighter and shorter fermentation process than black tea.
Tea leaves for making oolong tea are harvested typically in the morning and then dried inside a room to encourage fermentation.
However, the fermentation procedure must seize when the leaves are 70% green and 30% red in color.
Once the fermentation is complete, the tea leaves are rolled to release their distinct flavor and aroma.
The final step involves drying out the leaves with charcoal before they are rated for their quality and forwarded for packing.
WHERE IS PRODUCED?
The highest production of oolong is in the Fujian area of China, followed by Taiwan and a smaller amount is cultivated in India (Darjeeling) region and Vietnam.
In Taiwan, oolong tea is known as “Formosa Tea”, referring to the country’s original name.
This fine tea is in some cases fermented for a briefer period of time compared to its Chinese counterpart and some times, the leaves are only fermented by approx. 15%.
Additionally, Formosa teas are also called “pouchong” and they are sun-dried instead of indoor-dried.

Oolong tea is often mixed with orange flowers or bergamot oils. Orange flower oolong produces a very subtle and sweet orange aroma. Oolong tea with added bergamot oil will be stronger in flavor. Bergamont oil is derived from the tarty bergamot orange variety and is the common flavor added to all Earl Grey tea types. This is why you’ll often see this named as “Earl Grey Oolong”
Many will describe the fruity note of oolong tea as similar to that of peaches. Thus, enhancing its flavor with peaches would make total sense. This blend simply brings out oolong’s natural scent and flavor.
